Greco di Tufo DOCG

Greco di Tufo is the noblest white wine in Southern Italy and some may argue all of Italy. The grape is said to derive its name from the way it hangs on the vine – in “winged clusters.”. For centuries, Tufo has been the privileged site for the plantation of Greco due to the extraordinary characteristic of its soil. Production area: Tufo, Santa Paolina. Grapes: 100% Greco di Tufo. Age of the vineyard: 10 years + Vineyard position: south – east. Soil composition: Deep soils, sandy, of volcanic origin and rich in calcium carbonate. Altitude: Between 400 and 600 metres above the sea level. Harvest: First week of October. Vinification: After a soft crushing, must ferments at a controlled temperature without skins (16 – 18° C). Ageing: Stainless steel barrels. Bottle ageing: At least two months. ORGANOLEPTIC PROPERTIES Colour: lightstraw – yellow with lime – green tinge.Aroma: delicate and pleasant, – peach, almond and touch of smoke Flavour: dry, savoury, apricot, great acidity with agreeable fruit notes. Food and wine pairing: fish dishes, seafood cooked any way: fresh, sautéed, steamed Serving temperature: 8/10°C
