Age of the vineyards: 20 years old Training system: Guyot Density: 3600 vine/Ha Neive Tanaro river Canova crü Alba Cascina Vano Barbaresco Canova DOCG2016 Vinification: Harvest: by hand in the second decade of October Maceration: after a soft crushing, the maceration occurs in stainless steel tanks at controlled temperatures, and lasts 25 days, with continuous pumping for maximum pull of the aromas Ageing: in slavonian oak barrel (20/30 hl) for 24 months and one racking a year Refinement: in bottles laid horizontally for minimum 6 months Barbaresco Canova DOCG2016 Wine: Color: garnet with slight orange hues Bouquet: full, rich, with a hint of violet berries, jam and spieces Taste: full, elegant, mellow, with a final delicately bitter,and rightly tannic Food pairings: prefers savory and important dishes like first courses with Alba white truffle from and porcini mushrooms; it goes very well with second course of poultry meat, bush meat,pot roast and aged cheese
