Vinification
Harvest: by hand in the first decade of October Fermentation: with indigenous yeats
Maceration: after a soft crushing, the maceration occurs in in stainless steel tanks at controlled temperatures (28°), and lasts 20 days
Refinement: last about 18 months in oak barrels of 15 hl and then couple of months in bottles laid horizontally; this wine ages in a hurry and it has more light characters than the Barbaresco wine

Color: ruby red with orange hues Bouquet: delicate fruity and floral notes Taste: intense , dry and medium-bodied
Food pairings: it goes perfectly with traditional Piedmontese dishes, such as pasta, agnolotti, roasts, and typical cheeses such as Tuma di Langa
